  6. Una vez que la leche esté casi hirviendo tomaremos un poco con una cuchara y empezaremos a temperar las yemas de el huevo.
  7. Una vez ya temperado regresaremos todo en la olla y empezaremos a revolver en forma de 8 hasta tener una mezcla densa y pondremos a reposar hasta enfriarse
  8. Ya una vez que la masa choux esté fría empezaremos agregando los huevos uno por uno hasta integrar todos, al final tendremos una masa pesada pero moldeable.
  9. Ya teniendo la masa bien integrada, agregaremos a la manga y haremos espirales dejandole el piquino de arriba y llevaremos al horno a 150 °C por 15 minutos. Rellenamos por debajo.
  10. Por último pondremos 200 gr de azúcar en un sartén para hacerlo caramelo y empezar a pegar y adornar.
