- Con las claras hacemos un merengue francés, (batimos las claras y cuando tengan ligera espuma, añadimos el azúcar de poco en poco)


- A la mezcla de yemas le añadiremos el merengue y la harina, alternar la harina con el merengue, procurar terminar con el merengue.


- Enharinar un molde donde verteremos la mezcla.
Hornear a 180º de 40-50 minutos.

- Pasado el tiempo retirar del horno, esperar a que enfrié un poco para nivelarlo y cortarlo.

- Preparar las leches con las que se hidrataran el bizcocho.
Poner a hervir los líquidos con una raja de canela, la cáscara de naranja y limón es opcional (Dejar enfriar antes de colocarla al bizcocho).

- Hidratar el bizcocho, para saber cuanto es suficiente, podemos guiarnos tocando en la parte de abajo, si sentimos líquido significa que está listo.

- Una vez hidratado lo rellenamos y colocamos la otra parte del bizcocho dejarlo en refrigeración por minio 2 horas para que el pan absorba todo el líquido posible.


- Alisar el pastel y decorar al gusto, yo le puse una compota de durazno y hojuelas de cereal alrededor.
