  2. Para la masa poner en una olla agua y agregar la mantequilla en cubos.

  4. Cuando comience la ebullición, agregar la harina cernida de golpe y cocinar como si fuera un engrudo durante 5 minutos.

  8. En lo que se hornea nuestra base agregar nuestra mezcla en una manga pastelera y hacer en forma de profiteroles en una charola con papel encerado y meter al horno a 190°C por 20 minutos o hasta que estén firmes y dorados.
  9. Para elaborar la crema pastelera, vamos a mezclar 3 yemas de huevo, la fécula de maíz y cuatro cucharadas de azúcar y blanquear hasta que no tenga grumos la preparación, revolvemos hasta que tome un color amarillo pálid
  10. En una olla agregar la leche e incorporar el azúcar restante y añadir la esencia de vainilla. Cuando esté caliente vamos a agregar un poco de la leche a la mezcla de huevo para que tome su temperatura y el huevo no se cocine.
    Regresar al fuego para hervir y espesar.
  11. Poner en una manga con duya la crema pastelera y rellenar los profiteroles y reservar una parte de crema para el montaje.
  12. Hacer nuestro caramelo, alrededor del disco colocar los profiteroles rellenos y pasados por caramelo para poder pegarlos y decorar por encima. Poner al centro del disco el resto de la crema pastelera y decorar con trozos de durazno.
