  2. 150 gr harina fuerte
  3. 150 gr agua
  4. 1 gr levadura seca
  5. Para la masa
  6. 175 gr harina fuerte
  7. 10 gr harina integral
  8. 4 gr sal
  9. 2 gr levadura
  10. 20 ml aceite de olivo
  11. 50 gr aceitunas verdes

Steps to make to make Ciabatta

  1. Preparamos nuestros ingredientes para el Poolish.
    Tamizamos la harina y revolvemos con la levadura en un recipiente.
  2. Agregamos de poco a poco el agua (tibia) y mezclamos con ayuda de una cuchara hasta que tengamos una mezcla homogénea.
    Tapamos con un trapo húmedo y dejamos fermentado en un lugar donde haga calor.
    Es recomendable hacer el Poolish una noche antes para dejar fermentar en el refri durante toda la noche.
  3. Podemos ver que está listo nuestro Poolish cuando ya tiene burbujas en la superficie y creció un poco.
  4. Cuando observemos que casi esta nuestro Poolish, preparamos los ingredientes para nuestra masa.
    Tamizamos la harina fuerte y revolvemos junto con los demás polvos (harina integral, sal y levadura).
  5. Hacemos un volcán con los polvos que previamente revolvimos y en medio agregamos un fragmento del Poolish y comenzamos a mezclar.
    Repetimos hasta terminar con el Poolish y seguimos con el aceite.
  6. Nota: Al momento de agregar el aceite agregamos poco a poco revisando la consistencia de la masa, para evitar agregar de más.
    En mi caso, solo ocupé 3/4 partes del aceite solicitado.
  7. Ya que tengamos una masa suave formamos una bola y colocamos en un recipiente tapamos y dejamos reposar aproximadamente entre 30 y 40 min.
    Después de ese tiempo, nuestra masa habrá crecido al doble.
  8. Con ayuda de nuestros dedos retiramos de todos los gases por lo que nuestra masa se reducirá un poco.
  9. Con ayuda de un rodillo, estiramos nuestra masa a un grosor entre 1.5 y 2 cm y hacemos cortes rectos, yo utilicé las medidas de 7x9 una las deje de 7x18 cm por lo que el tamaño queda a su criterio.
    Tapamos y dejamos reposar nuevamente.
  10. Ya que hayan crecido nuestros rectángulos les colocamos las aceitunas al gusto.
    En mi caso le coloque a algunas y otras no.
    Y horneamos a 180°C durante 25 minutos aproximadamente.
  11. Este pan es blanco, por lo que nos daremos cuenta que ya estará listo cuando la base esté ligeramente dorada.
    Sacamos y listo, podemos disfrutar como un sándwich o acompañando alguna crema.
