  1. Para la masa:
    Disolver en agua la levadura con 2-3 cucharadas de harina y mezclar perfectamente hasta verse homogénea. Dejar quedar por 30 min. en un lugar cerca de fuente de calor.
  2. Tamizar la harina restante sobre la fuente de trabajo, hacer un volcán y mezclar con la masa madre. Añadir sal y amasar perfectamente hasta obtener una masa blanda.
  3. Amasar e ir agregando el agua poco a poco hasta obtener una masa elástica, espolvorear con harina y dejar leudar por aproximadamente hora y media cerca de un lugar caliente.
  4. Estirar la masa con un grosor de 0.5 cm de grosor.
  5. Para la pizza margarita:
    Precalentar el horno a 25°C
  6. Cortar el queso mozzarella y los tomates en concassé.
  7. Utilizar la masa estirada, untar aceite de oliva, posteriormente poner como base el queso mozzarella y tomate concassé.
  8. Colocar las hojas de albahaca salpimentar y rociar un poco de aceite de olivo.
  9. Llevar al horno por aproximadamente 30 minutos.
