- Preparamos y pesamos todos nuestros ingredientes por separado.
- Tomamos un recipiente amplio y vaciamos nuestros ingredientes secos: las dos harinas, la levadura y la sal. Mezclamos.
- Ahora agregaremos el agua poco a poco y vamos mezclando hasta integrar en una masa homogénea.
- Después agregamos el aceite de oliva poco a poco hasta integrar.
- Amasaremos por unos 40 minutos para darle cuerpo a nuestra masa. Anexo un video del ejemplo de amasado que se puede hacer en caso de tener manos calientes.
- Ahora dejaremos reposar nuestra masa en un recipiente y tapamos para que se fermente hasta que doble su tamaño.
- Después del tiempo de fermentación (puede variar dependiendo del clima donde vives) la sacamos del recipiente y le sacamos todo el aire (a esto se le llama "ponchar").
- Seguido de eso amasaremos unos minutos más para posteriormente darle forma a nuestro pan.
- Tomamos nuestra raspa o un cortados y dividimos la masa en 4 partes iguales (nos apoyamos de una báscula para pesarlas equitativamente)
- Tomamos una de las piezas que cortamos y empezamos a darle forma con las manos estirando un poco la masa a forma de cilindro y cuidando que su grosor sea el mismo en toda la figura. Aplastamos ligeramente y le damos forma similar a una memela pero más delgada. Repetimos con las 3 piezas faltantes.
- Tomamos nuestra charola para hornear y le colocamos papel estrella. Pasamos nuestras piezas de pan a la charola.
- Ahora hacemos tres cortes diagonales en cada pieza de pan, barnizamos con yema de huevo y adoramos con ajonjolí. Dejamos reposar un poco más pero ahora ya con la forma final del pan.
- Precalentamos el horno a 200 grados y horneamos por 14 minutos.
- Pasados los 14 minutos podemos usar nuestro pan. Yo lo rellené como sándwich pero pueden darle el uso que deseen. Que lo disfruten.
