  1. Iniciamos haciendo el poolish mezclando la levadura, harina y agua mezclar hasta que esta quede homogénea y reservamos unos minutos o unas horas
  2. Para hacer la masa hacemos una fuente con los secos y agregamos todos los ingredientes para la masa integramos bien y empezamos a amasar hasta obtener una masa un poco pegajosa y suave
  3. Dejamos fermentar nuestra masa hasta que doble su tamaño
  4. Después de que fermente la masa ponchamos ponemos un poco de harina en la mesa y empezamos a extender la masa en forma de rectángulo
  5. Una vez extendida la masa pones encima un poco de mantequilla y ponemos la nuez, las pasas hidratadas en el Controy, espolvoreamos el azúcar y la canela, empezamos a enrollar a lo largo hasta formar un taco (no apretemos mucho)
  6. Empezamos cortar trozos de 2 dedos de distancia ponemos en una charola dejamos fermentar un rato les ponemos encima unos cubitos de mantequilla y metemos a hornear a 200º
  7. Para el glaseado agregamos el Controy al azúcar glass y mezclamos. ya que saquemos del horno nuestros roles los bañamos con nuestro glaseado
