- 130 gr harina

- Comenzamos con la mise en place para la crema

- En una olla a fuego a bajo colocamos la mantequilla, con el jugo de limón, después incorporamos el azúcar, cuando comience a hervir, añadimos la ralladura de limón.



- Batimos los huevos a punto listón y atemperamos con la mezcla de la mantequilla.


- Una vez atemperada la agregamos poco a poco a la olla con mantequilla, y mezclamos hasta que tome consistencia espesa, y reservamos.

- Para el bizcocho.
Preparamos en mise en place
- Separamos claras de yemas.

- Comenzamos a mezclar las yemas un poco, para agregar primero el azúcar glas.

- Al poco tiempo de agregarle al azúcar glas a las yemas, añadimos los los 65 gr de harina reservamos.

- Comenzamos a hacer el merengue francés, con las claras tendremos que mezclarlas con un poco de sal, hasta que tomen una consistencia espumosa y blanca, la textura debe ser firme.


- Cuando tenga esa característica iremos colocando el azúcar poco a poco y seguiremos mezclando hasta que el merengue sea firme.

- Una vez realizado el merengue, añadiremos la mezcla que hicimos antes, la incorporamos poco a poco y mezclamos de manera envolvente.

- La segunda cantidad de harina que tenemos, la incorpormaos a la mezcla con el merengue, poco a poco alternado con la masa de yemas, seguimos mezclando.

- Una vez con la mezcla, la colocaremos en una charola con papel estrella, y la llevaremos al horno a 180º de 15-20 minutos



- Con ayuda de un trapo húmedo lo colocamos arriba de la charola, y le damos la vuelta, para sacar el bizcocho de la charola.



- La crema de limón que hicimos al inicio será el relleno de nuestro jelly roll.
- Tomamos un lado de el bizcocho y comenzamos a enrollar con cuidado para no romperlo.

- Así tendremos nuestro jelly roll, lo podemos decorar como queramos, en mi caso le añadí una crema pastelera, de vainilla.
